Their bites unwittingly triggers the tree’s natural defense mechanism, developing unique flavors while the leaves are still on the branches.To capture the finest quality, these insect-bitten buds are harvested entirely by hand during peak sun hours, before going through a closed-loop processing procedure under masterful technique by skilled artisans.
